Allison's action packed steak
For my brother’s birthday I designed this recipe which included all his favorite things, garlic, meat, spinach and tomatoes. It’s been a hit in our household ever since and makes a beautiful presentation. I always feel food brings people together and when it’s a special occasion I really like to focus on everyone’s favorite things and combine them in a unique way.
Allison's Action Packed Steak
(serves 4)Ingredients:- 4 round steaks
- ¼ cup plus 2 teaspoons olive oil, divided
- 1 teaspoon sea salt
- ½ teaspoon fresh cracked pepper
- 2 tablespoons fresh rosemary, minced
- 4 tablespoons reserved oil from jarred tomatoes
- 2 heads garlic, sliced in half
- 1 (6 ounce) package fresh spinach
- ¼ cup sun dried tomatoes packed in oil, sliced thinly
- 2 baby brie rounds, sliced
Preparation:Using a meat mallet, pound and tenderize steaks. Marinate overnight in ¼ cup olive oil, salt and pepper.
Combine rosemary and reserved oil from jarred tomatoes and let sit overnight.
Drizzle garlic with remaining 2 teaspoons olive oil and roast over fire for 15 minutes or until tender. Remove and set aside.
Heat a medium sauté pan with dash of olive oil and toss in spinach; cooking until wilted. Season with salt and pepper to taste and stir in roasted garlic and tomatoes. Allow to cool.
Remove steaks from marinade; discarding marinade. Spread spinach mixture over meat and top each steak with ¼ of the brie slices. Roll meat tightly starting from shorter side and secure with toothpicks.
Drizzle rosemary oil on each steak and place cut side down onto grill.
Grill over hot heat until meat reaches desired doneness.
Allow meat to rest for 5 minutes then remove toothpicks and slice into 1 inch thick pieces; serve.
