Traditional Amish Breakfast Casserole

The delicious traditional breakfast casserole recipe listed below is made with bacon, onion, eggs, hash brown potatoes and three types of cheese. Blend these simple, everyday, ingredients together to make what many of my friend consider to be the perfect breakfast.

Traditional Breakfast Casserole, Amish Style
Serves 8-10
INGREDIENTS
- 1 pound sliced bacon, diced
- 1 medium sweet onion, chopped
- 6 eggs, lightly beaten
- 4 cups frozen shredded hash brown potatoes, thawed
- 2 cups shredded Cheddar cheese
- 1 1/2 cups small curd cottage cheese
- 1 1/4 cups shredded Swiss cheese
PREPARATION
- Preheat oven to 350 Fahrenheit.
- In large skillet, cook bacon and onion until bacon is crisp, then drain. Mix together the remaining ingredients, then stir in bacon mixture.
- Transfer to a greased 9 x 13 casserole dish.
- Bake, uncovered at 350 Fahrenheit for 35-40 minutes or until eggs are set and bubbly
Let stand 10 minutes before serving.
Try this great variation on the delicious casserole above:
Substitute a pound of sausage instead of the bacon
Use 9 eggs instead of the six in the original recipe
Reduce cheese amounts:
1 1/2 cups Cheddar instead of 2
3/4 cup Swiss cheese instead of 1 1/4
