Breakfast Casserole, Amish Style

INGREDIENTS

1
pound sliced bacon, diced
- 1 medium sweet onion, chopped
- 6 eggs, lightly beaten
- 4 cups frozen shredded hash
brown potatoes, thawed
- 2 cups shredded Cheddar cheese
- 1 1/2 cups small curd cottage
cheese
- 1 1/4 cups shredded Swiss
cheese
PREPARATION
Preheat
oven to 350°F.

In
large skillet, cook bacon
and onion until bacon is
crisp, then drain. Mix together
the remaining ingredients,
then stir in bacon mixture.

Transfer
to a greased 9 x 13 casserole
dish. |

Bake,
uncovered at 350°F.
for 35-40 minutes or until
eggs are set and bubbly |

Let
stand 10 minutes before
serving |
Try
this great variation on the
delicious casserole above:

Substitute a pound of sausage
instead of the bacon
- Use 9 eggs instead of the
six in the original recipe
Reduce cheese amounts:
- 1 1/2 cups Cheddar instead
of 2
- 3/4 cup Swiss cheese instead
of 1 1/4
