1 chicken quartered
1 fresh shoots of lemongrass
2 tbs diced fresh ginger
4 large cloves fresh garlic
4 tbs oyster sauce
2 tbs soy sauce
2 tbs honey
chop and dice the middle of the lemon grass shoots, you want 1/4 cup finely minced lemon grass. Peel and dice garlic and ginger very fine.
place all seasonings in a large mixing bowel and combine oyster sauce , soy sauce, and honey.
place the chicken quarters in the bowel. mix and combine until all the chicken is coated. cover and refrigerate 4 hours.
after the marinate heat your grill on med. when the grill is at least 600 degrees put the chicken on. watch your temp. bring it back down to 500, cook 30 min each side at 450
