Ground black pepper sauce

This great black pepper sauce is one of the favorite recipes on the site. It's not another barbecue sauce recipe in the traditional manner - but it's a true winner, absolutely marvelous with grilled prime beef. It's very easy and quick to prepare, and it's so good that that I've come to think of it as one of my best barbecue sauce recipes, one that I really have to share with you all.

To be honest, a little trial and error is required here - the recipe for what I love to call my best homemade barbecue sauce makes up a whole lot of servings - definitely for at least 8 huge grilled steaks. You can alter the quantities accordingly, if you like, but I just eat the leftovers from the skillet…

Makes at least 8 servings
INGREDIENTS:
aro 3 tablespoons freshly ground black pepper
aro 3 cloves garlic, chopped
aro 2 tablespoons butter
aro 1 cup beef broth
aro 1 cup red wine
aro 2 tablespoons flour
aro 1 teaspoon dry tarragon leaves, shredded
aro ¼ - ½ cup sweet cream (according to taste)
   
PREPARATION:
aro In a heavy saucepan, melt butter over medium heat. Add garlic and brown slightly. Add pepper and heat for 1 ½ minutes.
aro Add flour, stir, and add beef broth and wine, and bring to the boil stirring all the time.
aro Add cream and tarragon, bring to the boil, reduce heat to low and simmer for about 10 minutes until sauce is reduced by about one third.
   
Serving suggestion: Serve with grilled steak and baked or mashed potatoes
