Boy Scout Troop 29 World-Class Chili





Won the Scout-O-Rama Chili cook-off in Louisville 2 years in a row

Ingredients:


2 lb ground beef
1 lge onion finely minced
1 clove garlic finely minced
2 ribs celery finely minced
12 oz diced tomatoes
1 bay leaf
3 jalapeno peppers finely minced (remove seeds and ribs)
12 oz V8 Juice
1 tsp kosher salt
2 tsp lemon pepper
2 tsp black pepper
2 tsp chili powder
1 tsp cumin
Preparation:

In large cast iron dutch oven. Cook down the ground beef, onion, garlic, celery and salt
Drain fat off mixture. Add tomatoes, v8, pepper, chili powder and cumin.
For more heat add some crushed red peppers.

Cook covered for 2 1/2 hrs stirring every 30 min.
Remove bay leaf and serve.

Serves: 10 Boy scouts and their leaders
