Favorite Breakfast Casserole

Don't you love to prepare casseroles for breakfast? In my experience, they are generally loved by the whole family (and in my case at least, by guests as well), they are quick and easy to make, casseroles can be prepared the night before and then popped into the oven when you're ready, and they definitely beat the standard cold cereal or scrambled eggs and toast as a breakfast meal.

What's more, most casserole recipes make very efficient use of basic ingredients, making them very economical as well. The list of advantages just goes on and on, prompting me to claim that breakfast casseroles are pretty hard to beat! And I'm not alone.

Well. I concur. The cheddar cheese, mustard and fresh sage really give this breakfast casserole recipe a tasty zap. This easy casserole is easy to prepare and will make a great start to any action packed day.

Fix this Casserole for a Great Breakfast

Serves 6

INGREDIENTS

PREPARATION

  1. Preheat oven to 350°F/180 C.
  2. Crumble sausage in a 9-inch casserole dish.
  3. Mix eggs, salt, and pepper with dry mustard in a bowl until well blended. Pour mixture over sausage and sprinkle with half the cheese.
  4. Place several spoons of the sour cream and the sage over casserole. Top with remaining cheese.
  5. Bake for 30 minutes.
  6. Cut into wedges and serve warm.
