Favorite Breakfast Casserole

Special thanks to Samantha Hayworth of Fort St. John, British Columbia for this delicious breakfast casserole recipe.

Don't you just love breakfast casseroles? In my experience, they are generally loved by the whole family (and in my case at least, by guests as well), they are quick and easy to make, many can be prepared the night before and then popped into the oven when you're ready, and they definitely beat the standard cold cereal or scrambled eggs and toast as a breakfast meal.

What's more, many recipes make very efficient use of basic ingredients, making them very economical as well. The list of advantages just goes on and on, prompting me to claim that breakfast casseroles are pretty hard to beat! And I'm not alone.

Well. I concur. The cheddar cheese, mustard and fresh sage really give this breakfast casserole recipe a tasty zap. This easy casserole is easy to prepare and will make a great start to any action packed day

Favorite Breakfast Casserole

Serves 6

INGREDIENTS

bullet 1 pound breakfast sausage, cooked and drained
bullet 6 eggs
bullet 4 ounces sharp Cheddar cheese, shredded
bullet 1 teaspoon mustard powder
bullet 1/2 cup fresh sage
bullet 1 cup sour cream
bullet Salt and pepper to taste

PREPARATION

bullet Preheat oven to 350°F/180 C.
bullet Crumble sausage in a 9-inch casserole dish.
bullet Mix eggs, salt, and pepper with dry mustard in a bowl until well blended. Pour mixture over sausage and sprinkle with half the cheese.
bullet Place several spoons of the sour cream and the sage over casserole. Top with remaining cheese.
bullet Bake for 30 minutes.
bullet Cut into wedges and serve warm.
