Try this Middle Eastern barbecue chicken marinade

Makes enough marinade for about 2 pounds chicken


  • 1/2 cup extra-virgin olive oil
  • 4 tablespoons fresh lemon juice
  • 1 medium onion, diced
  • 1/2 teaspoon freshly ground cinnamon
  • 1/2 teaspoon freshly ground cardamom seeds
  • 1 teaspoon dried or fresh thyme leaves
  • Salt and freshly ground black pepper
  • 1 teaspoon freshly ground cumin seeds, optional
  • 1 tablespoon black peppercorns
  • 1 tablespoon allspice berries
  • 1 teaspoon freshly ground nutmeg
  • 1/2 teaspoon paprika


  1. Mix all the chicken marinade ingredients in a non-reactive bowl.
  2. Add the meat to the marinade, cover and refrigerate for 4 -6 hours, turning the meat occasionally.
