Easy chicken recipes are my personal favorite, and chicken shish kebab is really easy and quick to make. My family devours these grilled chicken dinners, especially on these warm, long summer evenings outside. The simple marinade is what makes this recipe stand out, so if you're looking for an easy barbecue chicken recipe, easy to prepare and absolutely delicious, you have to give this jerked chicken kebab a try.

Jerked barbecue chicken kebab

Serves 6
INGREDIENTS:
bullet 2 pounds boneless skinless chicken breasts, cut into 1 1/2-inch pieces

For the marinade:

bullet 1 tablespoon ground nutmeg
bullet 1 tablespoon ground allspice
bullet 1 tablespoon ground cinnamon
bullet 1 red onion, chopped
bullet 3 green onions, chopped
bullet 1/4 cup extra-virgin olive oil
bullet 1 cup freshly squeezed orange juice
bullet 1/4 cup soy sauce
bullet 1/4 cup fresh thyme sprigs
bullet Grated peel from 1 lime
bullet 1 lime, juiced
bullet 1 garlic clove
bullet 1 (2-inch) piece fresh ginger, peeled
bullet Salt and pepper to taste
   

Preparation:

bullet Commbine all ingredients except chicken; puree until smooth in a food processor.
bullet Pour all but 1/4 cup of the mixture into a 1 gallon plastic sealable bag
bullet Add the chicken to the bag and let marinate in the refrigerator for 1 to 2 hours
bullet Skewer chicken pieces and grill for about 5 minutes on each side or until cooked through and grill marks appear.
bullet Baste with reserved marinade while grilling, then discard
