Try this two cheese, bacon, chilies, and eggs breakfast and brunch casserole.
One of my favorite breakfast casserole recipes, the cheese, bacon, chilies and eggs embodies this easy make-ahead dish with a full, slightly spicy flavor.
The Monterey Jack cheese may be freely replaced with Colby cheese,
or use a combination of both. Both these cheeses are milder than most
cheddars, but should be used while they are as fresh as possible.
As always, I recommend using the freshest ingredients possible for best results.

Perfect as a breakfast casserole, this recipe makes a perfect brunch casserole as well.
Spicy two cheese breakfast casserole
Serves 6-8
INGREDIENTS:
- 10 eggs
- 1 pint cottage cheese
- 1 pound Monterey Jack or Colby cheese (or 1/2 lb. of each), shredded
- 4 green chilies, seeded and chopped
- 1 teaspoon baking powder
- 4 tablespoons melted butter
- 1/2 cup flour
- Salt and pepper to taste
PREPARATION:
- Melt butter in 13 x 9 casserole dish.
- In a bowl, beat the eggs until you obtain a lemony color. Mix all the other ingredients with the eggs and pour the mixture into the casserole dish.
- Chill overnight if desired.
- Preheat oven to 350∞F., and bake for 30 minutes or until done.
- Let the casserole set for 30 minutes before serving.
