Looking for an easy breakfast casserole?
Try this two cheese, bacon, chilies and eggs
breakfast and brunch casserole

Can I entice you with this great recipe for breakfast casserole? One of my favorite breakfast casserole recipes, the cheese, bacon, chilies and eggs embodies this easy make-ahead dish with a full, slightly spicy flavor.

The Monterey Jack cheese may be freely replaced with Colby cheese, or use a combination of both. Both these cheeses are milder than most cheddars, but should be used while they are as fresh as possible. As always, I recommend using the freshest ingredients possible for best results. (Peapod delivers fresh produce and groceries to your door. Click here for $10 in FREE groceries from Peapod!).

This great breakfast casserole recipe is delicious when served with quick bread and fresh fruit and some excellent coffee

Perfect as a breakfast casserole, this recipe makes a perfect brunch casserole as well.
