Try this two cheese, bacon, chilies, and eggs breakfast and brunch casserole.

One of my favorite breakfast casserole recipes, the cheese, bacon, chilies and eggs embodies this easy make-ahead dish with a full, slightly spicy flavor.

The Monterrey Jack cheese may be freely replaced with Colby cheese, or use a combination of both. Both these cheeses are milder than most cheddar's, but should be used while they are as fresh as possible.

As always, I recommend using the freshest ingredients possible for best results.

Perfect as a breakfast casserole, this recipe makes a perfect brunch casserole as well.

Spicy Two Cheese Easy Breakfast Casserole


Serves 6-8

INGREDIENTS:

  • 10 eggs
  • 1 pint cottage cheese
  • 1 pound Monterrey Jack or Colby cheese  (or 1/2 lb. of each), shredded
  • 4 green chilies, seeded and chopped  
  • 1 teaspoon baking powder
  • 4 tablespoons melted butter
  • 1/2 cup flour
  • Salt and pepper to taste

PREPARATION:

  1. Melt butter in 13 x 9 casserole dish.
  2. In a bowl, beat the eggs until you obtain a lemony color. Mix all the other ingredients with the eggs and pour the mixture into the casserole dish.
  3. Chill overnight if desired.  
  4. Preheat oven to 350∞F., and bake for 30 minutes or until done.
  5. Let the casserole set for 30 minutes before serving.
