4-5 GOOD SIZED GREEN TOMATOES




2 CUPS SEASONED BREAD CRUMBS
1 1/2 CUP ALL PURPOSE FLOUR
1-2 TSP SALT
1-2 TSP LEMON PEPPPER
3-4 EGGS
2 CUPS BUTTER/OLIVE OIL

MIX THE DRY INGREDIENTS TOGETHER IN A BOWL
MIX THE EGGS IN A SEPERATE BOWL
POUR THE BREAD CRUMBS IN A BOWL ALONE

CUT THE TOMATOES ABOUT 1/4 TO 1/2 INCH THICK
DIP INTO EGG MIXTURE, THEN INTO FLOUR, THEN BACK INTO EGG AND FINALLY INTO BREAD CRUMBS. COOK OVER MEDIUM HEAT IN BUTTER OR OLIVE OIL UNTIL GOLDEN BROWN ON BOTH SIDES (ABOUT 3-6 MINUTES). SERVE WITH SOME WARMED SPAGHETTI SAUCE OR JUST EAT PLAIN.

THIS ALSO CAN BE USED TO MAKE FRIED ONION RINGS AND PEPPER RINGS IN PLACE OF TOMATOES.

I LOVE TO MAKE THESE FOR PARTIES, ETC.
