Grilled Chipotle Shrimp

I came up with these recipes when trying to put together a Mexican themed menu. The sweetness of the shrimp is perfectly balanced with the smoky, spicy chipotle marinade. The shrimp packs some heat so the cool dipping sauce compliments it well. It's a relatively simple dish that has a lot of "wow" factor.Grilled Chipotle Shrimp with Cilantro-Lime Dipping SauceIngredients2 pounds large shrimp, peeled
¼ cup molasses*
6 cloves garlic, smashed
2 chipotle chili peppers, seeded and minced
4 tablespoons adobo sauce
¼ teaspoon salt
Juice of one lime
1 tablespoon olive oil
PreparationMix molasses* and next six ingredients in a small sauce pan; cook over low heat until sugar is dissolved and then for an additional 5 minutes. Remove from heat to cool.
Add sauce and shrimp to resealable bag and marinate for 6-8 hours. Remove shrimp from sauce and place on skewers, reserving sauce. Grill over medium-low heat on grill for 2-3 minutes on each side or until shrimp are pink.
*substitute molasses for ¼ brown sugar and 2 tablespoons of water.
Cilantro-Lime Dipping SauceIngredients1 cup sour cream
1/3 cup chopped fresh cilantro
2 large garlic cloves, minced
1/4 teaspoon salt
Zest from 1 lime
PreparationCombine all ingredients, and stir well with a whisk. Cover sauce, and chill.
Serve as dipping sauce with Grilled Chipotle Shrimp.
