Grilled Tropical Hawaiian Chicken
Ingredients:
For the chicken:
8 Bone-in chicken breasts
1 mango, peeled and quartered
1 papaya, peeled and quartered
1 pineapple, peeled and sliced
1 red onion cut in half
Salt and pepper to taste
For the glaze:
1/2 cup Chinese hoison sauce
2 tablespoons tomato paste
3 tablespoons white vinegar
4 cloves garlic
1/4 cup chopped pineapple
1/8 teaspoon cayenne pepper
2 tablespooons sesame oil
2 tablespoon soy sauce
salt & pepper, to taste
Preparation:
Glaze:
Place all ingredients in a blender and puree till smooth.
Chicken:
Season the chicken with salt and pepper.
Grill the chicken over a medium heat, cooking for 15 minutes, then add the red onion to the grill. After 2 minutes turn everything and start brushing with the glaze.
Continue basting through the rest of the cooking time, about 8 to 10 minutes for the chicken and onion Remove from grill and set aside.
Brush the fruit with the glaze and place onto the grill. Cook for 2 minutes per side and then serve with the grilled chicken and onion.
