origins of the hamburger are lost in the mists

when Genghis Khan's marauders would place
pieces of beef under their saddles, which
they would happily consume after a long day's
pillaging. The time under the saddle effectively
tenderized the meat, which they would then
eat raw - apparently the origin of modern-day
beef tartar.
Immigrants
from Hamburg, Germany, arriving in the United
States in the 1850s brought a bun-less recipe
