Italian Veggie Grillers

Ingredients:





Zucchini Slices
Quartered Vidalia Onion Layers
Roma Tomatoes, Halved
Crushed Dried Basil
Olive Oil

Directions:

On wooden kabob skewers, arrange alternating zucchini slices, vidalia onion layers, and roma tomato halves. Brush lightly with olive oil and sprinkle basil over vegetables. Grill 4-6 minutes, turning once.

Enjoy as a side to grilled chicken, pork, beef, or serve with pasta. These delectable veggies can also be served over garlic bread for a fresh twist on bruschetta!

Nothing says summer more like grilled vegetables on kabobs! What a great and easy recipe! I made something similiar to this recipe, however, I added yellow squash and eggplant. I plan to try the suggestion of serving the vegetables like bruschetta on garlic bread.
