Lightly Grilled Blue Cheese and Walnut Apples

4 medium cooking apples




½ cup raspberry vinaigrette dressing
1/2 cup Blue cheese, crumbled
1/4 cup walnuts, finely chopped
¼ cup dried cranberries (optional)

Preheat grill to medium heat and lightly grease the grill rack.

Peel and core each apple; Slice in half lengthwise. Leave about a 1/2 to 1 inch deep pit for stuffing in each half.

Place apple halves in a shallow baking dish. Set aside 2 tablespoons of dressing. Pour remaining dressing over apples and turn to coat. Let stand 5-10 minutes.

Meanwhile, in a medium size bowl, mix together blue cheese, walnuts, and cranberries. Add in remaining 2 tablespoons of dressing.

Stuff apples with cheese mixture and place on grill. Cover with lid and cook until apples are lightly grilled (5-10 minutes) Serve warm.
