Mediterranean Coleslaw Recipe

While I think everyone would agree that coleslaw is an American barbecue staple, I find that most people just pick some up at the store instead of making it at home.

This is a pity, really. Why settle for industrial grade, when most coleslaw recipes are usually so quick and easy to make at home - as is the yummy recipe for coleslaw below. Different too, you have to admit, and great for entertaining.

Similar to peanut coleslaw, the cashews give it a delicious twist, while the olives give it a gentle Mediterranean flavor. I love to try different coleslaw recipes, and this non-creamy coleslaw recipe is now on my list of favorite cole slaw recipes.

Try this great & different coleslaw recipe

Makes 6-8 servings

SALAD INGREDIENTS:
bullet ¼ cabbage, thinly sliced
bullet ¼ red cabbage, thinly sliced
bullet 6 lettuce leaves, thinly sliced
bullet 3 carrots, sliced or grated into thin sticks
bullet 5 ounces pitless black olives, halved
bullet 5 ounces roasted ands salted cashew nuts
 

COLESLAW DRESSING INGREDIENTS:
bullet ¼ cup olive oil
bullet Juice from 2 freshly squeezed lemon
bullet 1 tablespoon of good quality prepared mustard
bullet 4 cloves of garlic, minced
bullet Salt and fresh, coarsely ground pepper, to taste.
 

PREPARATION:
bullet Place all the salad ingredients in a bowl
bullet Mix the sauce ingredients in a separate bowl
bullet Pour sauce over salad ingredients, mix and serve
