Mediterranean Coleslaw Recipe

This is a pity, really. Why settle for industrial grade, when most coleslaw recipes are usually so quick and easy to make at home - as is the yummy recipe for coleslaw below. Different too, you have to admit, and great for entertaining.

Similar to peanut coleslaw, the cashews give it a delicious twist, while the olives give it a gentle Mediterranean flavor. I love to try different coleslaw recipes, and this non-creamy coleslaw recipe is now on my list of favorite cole slaw recipes.

Print recipe Try this great & different coleslaw recipe Makes 6-8 servings SALAD INGREDIENTS: ¼ cabbage, thinly sliced ¼ red cabbage, thinly sliced 6 lettuce leaves, thinly sliced 3 carrots, sliced or grated into thin sticks 5 ounces pitless black olives, halved 5 ounces roasted ands salted cashew nuts   COLESLAW DRESSING INGREDIENTS: ¼ cup olive oil Juice from 2 freshly squeezed lemon 1 tablespoon of good quality prepared mustard 4 cloves of garlic, minced Salt and fresh, coarsely ground pepper, to taste.   PREPARATION: Place all the salad ingredients in a bowl Mix the sauce ingredients in a separate bowl Pour sauce over salad ingredients, mix and serve     That's it!
