Mediterranean Coleslaw Recipe

You've really got to try this yummy Mediterranean coleslaw recipe. Quite different when compared to regular coleslaw recipes, you'll soon have to admit.

While I think everyone would agree that coleslaw is an American barbecue staple, I find that most people just pick some up at the store instead of making it at home. 

This is a pity, really. Why settle for industrial grade, when most coleslaw recipes are usually so quick and easy to make at home - as is the yummy recipe for coleslaw below. Different too, you have to admit, and great for entertaining.

Similar to peanut coleslaw, the cashews give it a delicious twist, while the olives give it a gentle Mediterranean flavor. I love to try different coleslaw recipes, and this non-creamy coleslaw recipe is now on my list of favorite cole slaw recipes.

Makes 6-8 servings

SALAD INGREDIENTS:

  • 1/4 green cabbage, thinly sliced
  • 1/4 red cabbage, thinly sliced
  • 6 lettuce leaves, thinly sliced
  • 3 carrots, sliced or grated into thin sticks
  • 5 ounces pitless black olives, halved
  • 5 ounces roasted and salted cashew nuts

COLESLAW DRESSING INGREDIENTS:

  • 1/4 cup olive oil
  • Juice from 2 freshly squeezed lemon
  • 1 tablespoon of good quality prepared mustard
  • 4 cloves of garlic, minced
  • Salt and fresh, coarsely ground pepper, to taste

PREPARATION:

  1. Place all the salad ingredients in a bowl
  2. Mix the sauce ingredients in a separate bowl 
  3. Pour sauce over salad ingredients, mix and serve
  4. That's it! Less than 5 minutes preparation, and your done. Did I mention quick and easy?
