| Strip
steak is the boneless top loin strip steak,
the top section of a Porterhouse. Widely considered
one of the finest cuts of beef, it is cut
from the strip loin, and as this is a seldom-used
muscle, the strip steak is particularly tender.
The strip steak is known by various names,
such as striploin, Kansas City strip steak
and New York strip steak. It is delicious
broiled, sautéed, or as in our recipe
below (and my personal favorite) - grilled.
