Peanut Chicken Shish Kebab

Serves 4

Easy!

2 lbs boneless chicken breast, cut into 1/2" x 1" strips
1/2 cup peanut butter
4 scallions, green part only chopped fine
4 tablespoons, +/-, sesame oil
1 teaspoon ground ginger
1 teaspoon (mild) to 1 tablespoon (HOT) crushed red pepper-- to taste!

Mix peanut butter, sesame oil, ginger & red pepper. Add enough oil that the mixture is thin enough to coat the chicken-- about the consistency of honey. Put the chicken into the peanut butter mixture to coat. Marinate for a minimum of 1/2 hours, up to 24 hours.

Start your grill.

Thread the chicken on skewers (if you're using wooden skewers, don't forget to soak them for 1/2 hour+). Put skewers on a hot grill, and cook 4 minutes one side, 3 minutes the second side.

I like to serve this with rice and a green salad.
