RocCityGrillin’ Co. BBQ Chicken Recipe

Charcoal Charcoal Charcoal for Starters. Don't give me any Propane Please!

12 chicken leg 1/4's
Clean with cold water Pat dry
Coat with thin layer of Oil
Season lightly with salt , onion powder and garlic powder

Fire Up a Charcoal grill. I like to use a Weber Kettle Grill with Kingsford Charcoal. When charcoals are 3/4 gray, put Chicken on the grill, skin Side up.

Allow chicken to cook till brown then flip. I also like to rotate the weber grill grate. Helps with even cooking. Continue to cook.
No sauce Yet OK Just Relax ! Flip chicken a couple more time.
Sauce time! No Not the red BBQ stuff! I use a nice seasoned vinegar based sauce like Cheveta's or My own' County Fairs Roc Sauce' available at www. roccitygrillin. com.

Continue to cook chicken to 160 degrees. Slap on some more sauce. Remove cooked chicken from grill.

OK Critical time and Tip Of The Day!

Let the chicken sit for at least 15 minutes. I like to put the chicken as it is done into an old cooler. This allows the chicken to continue to cook and keeps it warm (you can also buy styrofoam coolers). It's also possible to wrap the chicken in aluminum foil.
