SASSY BARBECUED SHRIMP

6 Servings

24 ounces Uncooked Tail-On Shrimp
1 cup fresh LIME JUICE
4 JALAPENO PEPPERS, seeded and diced
1/3 cup BALSAMIC VINEGAR


2 Tablespoons TABASCO SAUCE
2 Tablespoons PEPPER
1/2 Cup ORANGE MARMALADE
1/2 Cup CORN OIL
4 GARLIC CLOVES, minced
2 teaspoons SALT
4 Tablespoons fresh CILANTRO, chopped

In a large sauce pan mix oil, vinegar, and lime juice over medium heat.
Add marmalade, tabasco sauce, salt and black pepper, mix well. Add jalapenos, cilantro and garlic. Remove from heat.

Arrange shrimp in a deep glass dish and pour the marinade over the shrimp.
Cover and refrigerate for 6-24 hours.

Heat gas or charcoal grill and place shrimp on skewers, grill for 2-4 minutes on each side or until shrimp turn pink.

Serve on a salad, a fiesta rice dish or pasta....Or serve with a dipping sauce and enjoy!!
