Strawberry Flank Steak Tacos
2lbs flank steak
• 2C diced fresh strawberries
• 4 cloves of garlic
• 7 limes (for juice and zest)
• 6oz of Olive Oil
• 2oz salt
• 2T pepper
• Honey as needed


• 5oz All purpose flour
• 5oz Corn meal
• 2oz dried cilantro
• Water as needed
• 1 1/2tsp Salt

Strawberry De Gallo-

• 2C diced fresh Strawberries
• 1C diced red onion
• 1/2C minced fresh cilantro
• 1 1/2oz minced serrano chilis
• 2oz lime juice
• Zest of 1 lime
• Salt and pepper to taste
Directions - Marinade: Combine all the ingredients for the marinade in a large mixing bowl by smashing the berries into the rest of the ingredients. Separate the marinade into two ziplock bags and place one pound of flank steak into each bag. Set aside for 30mins-3hrs until ready to be grilled.
Tortillas: Preheat a dry pan on medium/low. Combine dry ingredients in a medium size mixing bowl. Slowly add water until dough comes together into a ball. On a floured surface, roll small-ping pong ball sized pieces of dough into thin discs. Quickly place disc into the hot, dry pan (no oil/butter). When bubbles form, flip dough over. Once each side is cooked, place tortilla in a dry towel to maintain freshness.
Strawberry De Gallo: Combine all the ingredients in a small bowl and set aside.
Grilled Flank: Remove the flank steak from the marinade and place it on the grill. Cook meat until medium rare and remove from the grill. Allow to rest and then slice against the grain. Assemble your tacos and enjoy.
