Sweet and Sassy Grilled Chicken

Try this easy grilled chicken recipe:


- Chicken, with skin (2 breasts, 2 legs, 2 wings,
2 thighs or your favorite chicken parts)
- 1 Quart Pineapple Juice (enough to cover your
chicken pieces)
- 1/2 Cup Soy sauce
- 1 tsp. Salt
- 10 Peppercorns
- 1 inch Ginger, fresh, peeled & crushed
- 2 Cups Sugar, white granulated


Rinse chicken pieces and place in container with plenty of room. Combine pineapple juice, soy sauce, salt, peppercorns and ginger.

Marinate chicken in combined mixture for 8 hours or more.

Remove chicken from marinade. Discard marinade.

Shake excess marinade from chicken pieces.

Roll each chicken piece completely in sugar.

Place chicken on preheated grill, over medium heat. Depending on the size of your pieces, I have found that when grilling breasts and thighs it can take 10 to 15 minutes on each side and the legs and wings can take 8 to 12 minutes on each side. I have found when using a thermometer, each chicken piece should read 165 degrees.

For small or large batches, the ratio I use for the pineapple juice and soy sauce is 1 cup of pineapple juice to 2 tablespoons of soy sauce.
