WARREN & ELAINE’S WONDERFUL BEEF RIBS

4 lbs meaty beef ribs

Rub

¾ c. paprika
¼ c. ground black pepper
¼ c. salt
¼ c. sugar
2 Ybsp chili powder
2 Tbsp farlic powder
2 Tbsp onion powder
2 tsp cayenne pepper

Mix together. Store covered in cool, dark place.


The night before rub beef ribs.. Next day smoke using hickory chips for 5-6 hours. During the last 30 minutes of smoking slather on BBQ sauce (see recipe below. Serve additional sauce on the side.

Sauce


1 cup ketchup
1 cup red wine vinegar
1/2 cup brown sugar
1/4 cup molasses
1 1/2 teaspoons liquid smoke
1/2 teaspoon salt
¼ + 1/8 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder

1. Combine all of the ingredients in a medium saucepan over high heat, and whisk until smooth.
2. Bring sauce to a boil, then reduce heat and simmer uncovered for 30-40 minutes or until sauce has thickened.
Makes about 1 1/2 cups.
